How to make it

  • Bake potatoes for one hour
  • When potatoes are cool enough to handle
  • Cut potato lengthwise
  • Scoop out potato leaving 1/4 inch shell
  • Mash Potato filling in bowl
  • Add bacon
  • Add 1/2 cup shredded cheese
  • Add 1 cup sour cream
  • Add salt and pepper to taste
  • Blend well
  • Scoop filling back into empty potato shells
  • Place on cookie sheet
  • Add shredded cheddar on top of filling
  • Bake for 20 more minutes
  • Add chives before serving (optional)
