Chicken with Honey and Apple Glaze

- 10-12 (5-12 lbs.) chicken legs and thighs shopping list
- 2 cups apple juice or apple cider shopping list
- 4 garlic cloves, peeled, coarsely chopped or minced shopping list
- 1/2 tsp. ginger or a few slices of fresh ginger, mashed with the blade of a knife. shopping list
- 1/2 tsp. pepper, freshly ground shopping list
- 1/4 cup honey shopping list
How to make it
- In a large re-sealable bag, combine chicken, apple juice/apple cider, garlic, ginger and pepper.
- Note: Sometimes I add 1/4 cup of low sodium soy sauce to the marinade.
- Close bag, set in a bowl to chill in the fridge for at least 10-12 hours, turning occasionally.
- Remove chicken from marinade.
- The chicken can be baked in a 375 F oven for 60 minutes or barbecued, until meat is no longer pink and juices run clear.
- Brush chicken with honey.
- Cook turning as needed for 4 minutes longer.
- Serves 6

How fragrant! Very nice, and I bet the ginger and the apple juice will tenderize the chicken so well.

Absolutely delishious! I didn't have time to marinate it so I threw it all together in the oven, added potatoes and sliced apples, and broiled it at the end to get a crispy finish on the thighs! So good! I also added a little bit of salt less fiesta ...more
