How to make it

  • In a large re-sealable bag, combine chicken, apple juice/apple cider, garlic, ginger and pepper.
  • Note: Sometimes I add 1/4 cup of low sodium soy sauce to the marinade.
  • Close bag, set in a bowl to chill in the fridge for at least 10-12 hours, turning occasionally.
  • Remove chicken from marinade.
  • The chicken can be baked in a 375 F oven for 60 minutes or barbecued, until meat is no longer pink and juices run clear.
  • Brush chicken with honey.
  • Cook turning as needed for 4 minutes longer.
  • Serves 6

    Absolutely delishious! I didn't have time to marinate it so I threw it all together in the oven, added potatoes and sliced apples, and broiled it at the end to get a crispy finish on the thighs! So good! I also added a little bit of salt less fiesta seasoning and a bit of sea salt. Love all the flavors! Thanks for the idea for using apple juice and honey! Will have to try it with marinating overnight!

    How fragrant! Very nice, and I bet the ginger and the apple juice will tenderize the chicken so well.
