How to make it

  • Preheat oven to 200C
  • Pour milk into a medium saucepan and to the boil. Add the polenta in a thin steady stream, stirring constantly. cook for about 5 minutes, till it gets all thick like. Remove from heat.
  • In a small saucepan, combine the cornflour and a little of the extra milk to form a paste. Add the rest of the milk. Heat this mixture, stirring constantly, till it boils and thickens, like cream consistency.
  • Stir the sugar and vanilla into the milk mixture and add to the polenta.
  • Spoon into a baking dish and top with the orange slices.
  • Bake for 20 minutes or till golden.
  • Serve with a scoop of ice cream if you want.
  • * instead of making the cornflour mixture, you could just use 90 mls of pouring cream if you dont care about the fat content.
