Orange polenta pudding

- 1 cup milk shopping list
- 1/2 cup polenta/corn meal shopping list
- 1 tablespoon cornflour shopping list
- 2/3 cup milk extra shopping list
- 1/4 cup white sugar shopping list
- 1 teaspoon vanilla extract shopping list
- 1 orange, peeled, sliced shopping list
How to make it
- Preheat oven to 200C
- Pour milk into a medium saucepan and to the boil. Add the polenta in a thin steady stream, stirring constantly. cook for about 5 minutes, till it gets all thick like. Remove from heat.
- In a small saucepan, combine the cornflour and a little of the extra milk to form a paste. Add the rest of the milk. Heat this mixture, stirring constantly, till it boils and thickens, like cream consistency.
- Stir the sugar and vanilla into the milk mixture and add to the polenta.
- Spoon into a baking dish and top with the orange slices.
- Bake for 20 minutes or till golden.
- Serve with a scoop of ice cream if you want.
- * instead of making the cornflour mixture, you could just use 90 mls of pouring cream if you dont care about the fat content.
