How to make it

  • Combine the rice and water in a saucepan.
  • Bring this to a boil
  • Reduce heat to low and cover and cook for 20 minutes till rice tender and water absorbed.
  • While rice cooking heat oil in large skillet on medium high heat.
  • Add the onions and both peppers and saute till tender for approx 5 minutes.
  • Add beans, tomatoes and bbq sauce to the skillet and bring to a boil.
  • Reduce heat to medium and simmer for 15 to 20 minutes
  • May put bean mixture and rice in seperate bowls and serve or can put bean mixture in a large bowl and make a mound of the rice in the center of the beans.
