Easy Bbq Beans And Rice Recipe
This is a nice flavorful main dish that is cheap, healthy and darn good tasting. You won't miss the meat in this dish at all.

Ingredients
  • 1 cup uncooked rice - I use converted rice
  • 2 cups water
  • 1 Tbls cooking oil
  • 1 green AND 1 red pepper, seeded and chopped
  • 1 small onion, chopped
  • 1 can black beans, rinsed and drained
  • 1 can kidney beans, rinsed and drained
  • 1 can chickpeas, rinsed and drained
  • can sub other types of beans as desired. I simply like this combo best for our family
  • 1 can stewed tomatoes
  • 3/4 to 1 cup barbeque sauce

Directions
  1. Combine the rice and water in a saucepan.
  2. Bring this to a boil
  3. Reduce heat to low and cover and cook for 20 minutes till rice tender and water absorbed.
  4. While rice cooking heat oil in large skillet on medium high heat.
  5. Add the onions and both peppers and saute till tender for approx 5 minutes.
  6. Add beans, tomatoes and bbq sauce to the skillet and bring to a boil.
  7. Reduce heat to medium and simmer for 15 to 20 minutes
  8. May put bean mixture and rice in seperate bowls and serve or can put bean mixture in a large bowl and make a mound of the rice in the center of the beans.
