Stuffed Flounder Recipe

Ingredients
  • 1 bunch green onions, finely chopped
  • 1 large Bermuda onion, finely chopped
  • 1/4 pound butter
  • 1 c flour
  • 2 quarts fish stock
  • 2 dozen oysters, scalded (DO NOT BOIL THESE) - finely chopped
  • 1/2 lb boiled shrimp, finely chopped
  • 1/2 lb fresh mushrooms, finely chopped
  • Salt, cayenne pepper to taste
  • 6 1lb flounders

Directions
  1. Saute the onions in butter
  2. Blend the flour in thoroughly.
  3. Add fish stock and boil for 5 minutes.
  4. Add oysters, shrimp, and mushrooms.
  5. Season to taste.
  6. Remove backbone from the flounder and fill losely with stuffing.
  7. Broil slowly on both sides until golden brown.

This looks like a good recipe, but it is not the Brennan's recipe, which contains crabmeat, as do most Gulf Coast Flounder recipes. The Brennans recipe is also more complicated than this. I have the Brennans cookbook and there are 16 ingredients and oysters are never chopped. Sorry, but this is not authentic.


My Recipe comes from the Brennan's chef, a freind of my grandfather, ca. 1963. I can imagine they've tweaked the recipe somewhat in 44 years.
