Ingredients
  • 1/2c balsamic vinaigrette dressing
  • 1 onion, finely chopped
  • 1 cloves garlic, minced
  • 1 can (28oz) diced tomatoes, undrained
  • 2 c penne pasta, uncooked
  • 1lb cooked, cleaned, peeled shrimp
  • 1/4 c Parmesan Cheese

Directions
  1. Heat large nonstick skillet on med high heat. Add dressing, onions and garlic; cook 2 min. Stir in tomatoes; cook 12 min, stirring occasionally. Meanwhile cook pasta as directed on pkg.
  2. Add shrimp to sauce; cook 2 min or until heated through
  3. Drain pasta; toss with shrimp mixture. Sprinkle with cheese.

I substituted chicken for the shrimp and my boys just love it. They are just chowing down right now! I should have made a double batch. I also added red pepper because they like it hot!
