TUNA RING WITH CHEESE SAUCE DATED 1968 This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Jennet Estate in Allen, Texas in 1983.

Ingredients
  • 1 egg
  • 14 ounces canned tuna drained
  • 1/2 cup chopped onion
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup snipped parsley
  • 1 teaspoon celery salt
  • 1/4 teaspoon pepper
  • 2 cups all purpose baking mix
  • 1/2 cup cold water
  • Cheese Sauce:
  • 1/4 cup butter
  • 1/4 cup all purpose baking mix
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups milk
  • 1 cup shredded cheddar cheese

Directions
  1. Heat oven to 375.
  2. Beat egg slightly then set aside 2 tablespoons egg.
  3. Stir tuna, onion, cheese, parsley, celery salt and pepper into remaining egg.
  4. Stir baking mix and water to a soft dough then knead 5 times on floured cloth covered board.
  5. Roll into rectangle then spread with tuna mixture.
  6. Roll up beginning at long side.
  7. With sealed edge down shape into ring on greased baking sheet and pinch ends together.
  8. With scissors make cuts 2/3 of the way through ring at 1” intervals.
  9. Turn each section on its side to show filling then brush top with reserved egg and bake 30 minutes.
  10. To make sauce melt butter over low heat then blend in baking mix, salt and pepper.
  11. Cook over low heat stirring until smooth and bubbly then remove from heat and stir in milk.
  12. Heat to boiling stirring constantly then boil and stir 1 minute them stir in cheese until melted.
