Cornbread so satisfying and filling, you could use it for a main dish.

Ingredients
  • 1 package (16 ounce) of broccoli - thawed
  • 2 cups cottage cheese
  • 5 eggs (beaten)
  • 1-1/2 sticks butter - melted
  • 1 chopped onion
  • 2 boxes Jiffy cornbread mix (8-1/2 ounces each)

Directions
  1. Mix butter, cottage cheese, eggs, and cornbread mix in a large bowl
  2. Stir in broccoli and onion
  3. Pour into a greased 9x13 casserole
  4. Bake at 350 degrees for 60 minutes
