How to make it

  • set your oven to broil
  • lay the tomatoes into a shallow baking dish
  • salt and pepper the tomatoes
  • sprinkle basil over the tomatoes as much as you like
  • sprinkle the garlic over the tomatoes
  • drizzle the evoo over the tomatoes
  • cover the tomatoes with the grated cheese, don't pack the cheese down
  • place in broiler for 10 minutes
  • when the cheese is melted and toasty on top it's done
  • it could take as little as 7 minutes or as long as 12 minutes the shorter the time in the broiler the chillier the tomatoes will be. the contrast in temps is suprizing
