Weeknight Fajitas Recipe
this is a quick and easy fajita recipe. It is very good served with sour cream, guacamole and pico de gallo sauce.

Ingredients
  • 1/3 cup zesty Italian salad dressing
  • 1 lb. boneless, skinless chicken breasts, cut into strips
  • 1 medium green pepper, cut into strips
  • 1 medium onion, cut into thin wedges
  • 1 clove garlic, minced
  • 1/2 tsp. dried oregano
  • 1 medium tomato, cut into thin wedges
  • 8 (8") flour tortillas
  • Garnishes -- sour cream, guacamole and pico de gallo sauce

Directions
  1. In a large bowl, pour dressing over chicken, green pepper, onion, garlic and oregano; toss till well coated with dressing. Let stand for 15 minutes. Drain; discard dressing.
  2. In a large skillet coated with cooking spray, add the chicken mixture and cook over medium heat, stirring for 10 minutes or until chicken is cooked through. Stir in tomatoes, cook an additional 3 minutes.
  3. Wrap tortillas in dampened paper towels. Microwave on high 45 seconds to 1 1/2 minutes or until softened.
  4. Fill tortilla with chicken mixture and garnishes of sour cream, guacamole and pico de gallo; roll up
  5. Serves 4; 2 fajitas each
