Pumpkin Cheese Cake

- 2 (8oz) pks of cream cheese, softened shopping list
- 1/2 cup pumpkin shopping list
- 1/2 cup sugar shopping list
- splash vanilla shopping list
- dash cinnamon shopping list
- 2 eggs shopping list
- 1 graham cracker crust (or you could make your own) shopping list
How to make it
- Preheat oven to 350
- With an electric blender cream together cream cheese, pumpkin, sugar, vanilla, and cinnamon until well blended
- Add eggs and mix until well blended
- Pour into crust
- Bake 40 minutes or until almost set
- Allow to cool at room temperature
- Then cover and put in fridge at least 3 hours, but overnight is best
- **Serve with whip cream and chocolate dipped pecans**
- ***To avoid cracking: while the oven is preheating place a 13x9 baking dish full of water on bottom rack of oven. Leave it in until pie is done***
