Ingredients
  • 1 cup fresh or frozen blueberries or berries of choice
  • 2 cups half and half ( skim milk can be used for a lighter version)
  • 2... 8 ounce packages light cream cheese cut into 1 inch cubes
  • 12 eggs or 3 cups egg substitute
  • 1/3 cup maple syrup
  • !2 slices day old bread cut into 1 inch cubes
  • Sauce:
  • 1 cup water
  • 1 cup sugar
  • 2 tbsp cornstarch
  • 1 cup fresh or frozen berries

Directions
  1. I do this just before going to bed the night before
  2. In a sprayed 13 x 9 pan layer half of the bread...top with cheese evenly...top with berries evenly...top with rest of the bread
  3. In bowl beat well eggs, maple syrup and milk....pour over bread cover and chill 8 hours or overnight
  4. Remove from fridge 30 minutes prior to baking
  5. Preheat oven 350* ...bake 30 minutes covered remove cover bake an additional 25-30 minutes
  6. Meanwhile prepare the sauce:
  7. Bring to a boil and boil 3 minutes over medium heat stirring constantly water, cornstarch and sugar
  8. Reduce heat add berries and cook 8-10 minutes until berries burst stirring once and awhile serve over French Toast makes 1 3/4 cup sauce
