How to make it

  • Spray a large pot with cooking spray. Cook onion, chilli and capsicum till soft, then add chilli powder, cummin, thyme and garlic.
  • Reduce heat to low, add everything else, except water.
  • Cover and simmer 15 minutes, stirring occasionally. Remove lid and cook a further 5 minutes or whatever, till thick, adding water as needed.
  • Serve with a dollop..(ew i just realised how much i dont like that word) ...of natural yoghurt and a sprinkle of chopped parsley.
  • Oh have it with cornbread too. ( i have a recipe......incase you don't..)
