Penne With White Beans Tomatoes And Potatoes

- 1/4 cup extra virgin olive oil shopping list
- 1 medium yukon gold potato peeled and diced shopping list
- 2 medium garlic cloves minced shopping list
- 1-1/2 cups diced canned tomatoes shopping list
- 2 cups cooked great northern beans shopping list
- 2 tablespoons finely chopped fresh basil leaves shopping list
- 1/2 teaspoon salt shopping list
- 3/4 pound penne pasta shopping list
How to make it
- Heat oil over medium high heat in a large skillet.
- Add potato and cook until tender and golden stirring frequently about 5 minutes.
- Add garlic and cook until fragrant about 1 minute.
- Add tomatoes and simmer until slightly thickened about 7 minutes.
- Stir in beans and simmer until warmed through about 3 minutes.
- Stir in basil and season with salt.
- Meanwhile bring 4 quarts of water to a boil in large pot.
- Add 1 tablespoon salt and pasta to boiling water and cook until al dente.
- Drain pasta and return it to cooking pot then stir in sauce.
- Divide among 4 pasta bowls and serve immediately.
