  • 1 small head green cabbage
  • 2 small Granny Smith apples, peeled, cored, and thinly sliced
  • 1 medium yellow onion, thinly sliced
  • 1 cup shredded carrot
  • 1 cup unsweetened apple juice
  • 2 tablespoons red-wine vinegar or cider vinegar
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon freshly ground black pepper
  • 3 ounces lean ham, julienned (about 1 cup)
  • Chopped fresh parsley for garnish

Directions
  1. Slice cabbage in half. Slice each half into thin shreds. In a large deep nonstick skillet or Dutch oven, combine cabbage, apples, onion and carrot. Stir in apple juice, vinegar, sugar and pepper. Mix well.
  2. Cook cabbage mixture over medium heat until just tender, about 10 minutes. Add ham to mixture in skillet.
  3. Cover skillet and continue to cook for 30 minutes, stirring occasionally. Sprinkle with chopped parsley. Serve immediately.
