Pink Apple Gin Sauce Recipe
This is a great sauce that we usually serve over braised duck breasts.

Ingredients
  • 4 red delicious apples
  • 1 medium yellow onion, diced
  • 3 Tablespoons butter
  • 1/4 cup plus 2-3 Tablespoons GIn
  • 1 Red Jalapeno Pepper, cut in half
  • 2 Tablespoons Lemon Zest
  • 1-2 Tablespoons Salt
  • 1-2 Tablespoons Pepper

Directions
  1. Cut and quarter apples leaving peel on.
  2. Heat sauce pan over medium low heat.
  3. Add butter, pepper, and diced onions.
  4. Cover and cook 5 minutes.
  5. Add 1/4 cup of gin.
  6. Cover and cook another 15 minutes, stirring frequently (add a little water if needed)
  7. Remove pepper
  8. While Mixture is hot pass through a food mill
  9. Add lemon zest, remaining gin and season with salt and pepper
  10. Add more gin if necessary per taste.
  11. Serve sauce warm over duck breast
  12. Sauce keeps for 3-4 days in refrigerator.
