Pink Apple Gin Sauce

- 4 red delicious apples shopping list
- 1 medium yellow onion, diced shopping list
- 3 Tablespoons butter shopping list
- 1/4 cup plus 2-3 Tablespoons gin shopping list
- 1 Red jalapeno pepper, cut in half shopping list
- 2 Tablespoons lemon zest shopping list
- 1-2 Tablespoons salt shopping list
- 1-2 Tablespoons pepper shopping list
How to make it
- Cut and quarter apples leaving peel on.
- Heat sauce pan over medium low heat.
- Add butter, pepper, and diced onions.
- Cover and cook 5 minutes.
- Add 1/4 cup of gin.
- Cover and cook another 15 minutes, stirring frequently (add a little water if needed)
- Remove pepper
- While Mixture is hot pass through a food mill
- Add lemon zest, remaining gin and season with salt and pepper
- Add more gin if necessary per taste.
- Serve sauce warm over duck breast
- Sauce keeps for 3-4 days in refrigerator.
