How to make it

  • Cut and quarter apples leaving peel on.
  • Heat sauce pan over medium low heat.
  • Add butter, pepper, and diced onions.
  • Cover and cook 5 minutes.
  • Add 1/4 cup of gin.
  • Cover and cook another 15 minutes, stirring frequently (add a little water if needed)
  • Remove pepper
  • While Mixture is hot pass through a food mill
  • Add lemon zest, remaining gin and season with salt and pepper
  • Add more gin if necessary per taste.
  • Serve sauce warm over duck breast
  • Sauce keeps for 3-4 days in refrigerator.
