Friday Night Carrot Leek Parsnip Chicken Orzo Soup

- 1 large bunch of carrots washed and tops off shopping list
- 1 large bunch of parsnips washed and tops off shopping list
- 3 leeks tops cut off and discarded shopping list
- 1 chicken or chicken parts washed and excess fat removed shopping list
- skin on or off as preferred shopping list
- 4 teaspoons granulated chicken boullion shopping list
- white pepper shopping list
- fresh dill shopping list
- fresh bread or crackers shopping list
How to make it
- put chicken, whole parsnips, whole carrots and leeks in pot
- fill with water tto cover chicken and veggies
- cook on med/high til hot
- add boullion crystals ,pepper and dill
- stir gently
- lower to high simmer
- remove chicken pieces when done
- remove all veggies
- separate into 2 groups
- slice 1/2 carrots and parnips add to soup
- place rest in blender and puree in 1 cup of soup
- add puree to soup

- heat salted water to cook orzo and cook al dente

- remove chicken from bones
- cut or tear into bite size pieces
- add to soup

- add orzo
- ---------
