quick and tasty kebabs

- For Kebabs: shopping list
- 2 porterhouse steaks (1 kg) trimmed and cut into 2cm chunks shopping list
- 1 medium onion cut into kebab size protions shopping list
- 1 capsicum cut into kebab size portions shopping list
- 6-7 swiss brown mushrooms cut into 1/4's shopping list
- 1 tsp of mayonnaise shopping list
- 2 tbsp of seeded mustard shopping list
- freshly ground pepper shopping list
- 2 tbsp of red wine vinegar shopping list
- 2 tbsp of finely chopped rosemary (straight from the garden is best) shopping list
- Salad: shopping list
- 5-6 large cos lettuce leaves torn into pieces shopping list
- 8-10 cherry tomatoes cut into halves. shopping list
- 1 small cucumber cut into half and then diagonally shopping list
- 1 small red capsicum cut into strips shopping list
- small bunch of asparagus, par boiled and chopped diagonally shopping list
- Dressing: shopping list
- 1-2 anchovies, finely chopped shopping list
- 1 hard boild egg shopping list
- 2 tbsp of mustard shopping list
- 1 tsp of mayonnaise shopping list
- 1 tbsp of red wine vinnegar shopping list
- 1 tsp of good olive oil shopping list
How to make it
- Kebabs:
- Combine mayonnaise, mustard, red wine vinegar, pepper and rosemary and marinate beef for 60 minutes (approximately)
- Assemble all ingredient on kebabs and cook (either on bbq or hot heavy based frypan)
- Use left over marinade to baste as you cook (told you it was easy)
- Salad:
- assemble ingredients in bowl
- assemble dressing, add egg, you can either chop the egg very finely or use a food processer, add extra boiling water if dressing is too thick add a wee bit of boiling water.
- Serve dressing on side for health conscious folk or toss through
- voila, easy delicious meal, I made this last night and a TIP, PLACE THE MUSHROOMS NEXT TO THE MEAT ON THE KEBAB AND THEY SUCK UP THE JUICES. YUM!
