How to make it

  • blanch, peel and slice the tamarillos by putting in boiling water till they split (can be assisted by pricking the skin with a knife), then draining or putting under the cold tap - the skin should peel off in your hands, slice thickly and put aside.
  • you should have already turned the oven on to about 220 celcius.
  • put a low wide dish in the oven to pre-heat it.
  • make a batter by combining the flour, baking powder, eggs and milk, whisking it all into quite a wet mixture ( control using milk). I've had good results with a processor to really stir it all up, but you can whisk it ok too.
  • pre-oil the now hot dish by throwing a chunk of butter in while its in the oven.
  • Once thats melted in the oven bring it out and lay up the tamarillo slices in the bottom.
  • Pour over the batter and sprinkle sugar on top before going into the oven......cook until a knife comes out clean - serve with yoghurt or icecream straight out of the oven.......it goes a nice solid pudding once cold, perfect for the next mornings smoko.
