Pear-Zucchini-Carrot Bread

- 2 medium size pears, chopped (1 1/2 c) shopping list
- 1/3 c zucchini, grated shopping list
- 1/3 c carrots, grated shopping list
- 1/4 t ginger shopping list
- 1/4 t baking powder shopping list
- 3 c plain flour shopping list
- 1 1/2 t salt shopping list
- 1 t soda shopping list
- 3/4 t cinnamon shopping list
- 1/2 t grated lemon rind shopping list
- 3 large eggs shopping list
- 1 1/2 c sugar shopping list
- 1 c oil shopping list
- 1 1/2 t vanilla shopping list
- 1/2 c chopped walnuts shopping list
How to make it
- Preheat oven to 350 degrees.
- Mix dry ingredients.
- Beat eggs well, add sugar, oil, vanilla, and lemon rind.
- Blend in flour mixture.
- Add vegetables, pears and nuts.
- Mix well.
- Pour into 3 smll loaf pans or 2 large pans.
- Let stand 5 minutes.
- Bake for 40-45 minute in small loaf pans or 65 minutes in large loaf pan.
