INDONESIAN COCONUT RICE
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Howard Estate in Mesquite, Texas in 1983.

Ingredients
- 1-1/2 cups long grain rice
- 2-1/2 cups coconut milk
- 1/2 teaspoon salt
- 2 bay leaves
Directions
- In heavy pan bring rice, milk, salt and bay leaves to boil.
- Cover and simmer 20 minutes then remove from heat and let stand covered 10 minutes.
- Right before serving fluff with a fork.
