Apricot Rice Recipe

Ingredients

2-1/2 cups water

1/4 cup finely chopped dried apricots

1/4 teaspoon salt

1 cup long grain rice

Directions

Combine water, apricots and salt in medium saucepan.

Bring to a boil then stir in rice.

Cover and reduce heat then simmer 20 minutes.

Remove from heat and allow to stand 5 minutes.
