  • For the Burritos:
  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 (4.5 ounce) can diced green chile peppers
  • 1 (16 ounce) can refried beans
  • 6 Burrito-size flour tortillas
  • Crumble ground beef into a skillet over medium-high heat. Cook and stir until evenly browned. Add onion, and cook until translucent. Drain grease, and season with garlic, cumin, salt and pepper. Stir in the green chilies and refried beans until well blended. Warm tortillas, place filling inside and wrap.
  • Place Burritos into a 9x13-inch, greased baking dish. Set aside.

Directions
  1. For the sauce:
  2. 2 tablespoons butter or margarine
  3. 3 tablespoons all-purpose flour
  4. 1 3/4 cups water
  5. 1 (8 ounce) can tomato sauce
  6. 1 1/2 teaspoons chili powder
  7. 1 teaspoon beef bouillon granules
  8. 3/4 teaspoon ground cumin
  9. 1/2 teaspoon salt
  10. 2 cups shredded Mexican blend cheese or Cheddar cheese
  11. 1 (2.25 ounce) can sliced ripe olives, drained (optional)
  12. 1/3 cup chopped green onions (optional)
  13. In a saucepan, melt butter. Stir in flour until smooth; gradually stir in water. Bring to a boil; cook and stir for 2 minutes or until thickened. Add the tomato sauce, chili powder, bouillon, cumin and salt. Simmer, uncovered, for 5 minutes or until thickened.
  14. Pour over the burritos. Sprinkle with cheese, olives if desired and onions. Bake, uncovered, at 350 degrees F for 10-20 minutes or until heated through.
