How to make it

  • Heat oil in skillet
  • Add onion and garlic, saute for 3 minutes
  • Add pepper, squash, and sweet potato, saute for 5 minutes
  • Add all other ingredients and simmer for 30 minutes or until vegetables are softened (add water if necessary)
  • Serve by itself or over couscous
