Easy Chocolate cheesecake

Ingredients
  • 1 inner package chocolate graham crackers (Crushed)
  • 1/4 cup butter (melted)
  • 1/2 cup mixed chocolate chips
  • 3 (8 oz packages) cream cheese
  • 3 C granulated sugar
  • 3 Eggs
  • 2 3.5 oz Hershey's 65% cacao reserve chocolate (melted)
  • 1/4 cup whipping cream
  • 2 t vanilla
  • 1 C Sour Cream
  • 1/2 C granulated sugar
  • 1 t vanilla

Directions
  1. Preheat oven 400 F
  2. Mix graham crackers and butter and press into bottom of 9-10" spring form pan
  3. Sprinkle chocolate chips (whatever flavors you want) over crust
  4. Bake for 10 min
  5. Remove from oven lower baking temp to 350 F
  6. Mix cream cheese and sugar until well blended
  7. add eggs 1 at a time mixing after each addition
  8. Add whipping cream and vanilla mix well
  9. Fold in chocolate
  10. Pour into pan
  11. Bake 60 minutes or until cake has puffed and is set around edges and only jiggles in center a little bit
  12. Remove from oven, maintain temp
  13. mix sour cream, sugar vanilla
  14. spread carefully on top of cake
  15. return to oven and bake 10 minutes more.
  16. turn off oven
  17. remove cake, run knife around pan edge
  18. return to oven and cool to room temp
  19. refrigerate overnight
