Ingredients
  • 1 can stewed tomatoes
  • 3 cans chicken broth
  • 1/2 cup quick cooking pearl barley
  • 10 ounce package frozen corn kernels
  • 9 ounces frozen cut green beans
  • 8 ounces frozen baby carrots
  • 1 teaspoon dry oregano
  • 1/4 teaspoon freshly ground black pepper

Directions
  1. Place pan on burner then add stewed tomatoes and chicken broth.
  2. Bring to a boil over high heat stirring occasionally with a wooden spoon.
  3. Add barley, corn, beans, carrots, oregano and pepper then reduce heat to medium low.
  4. Cover and simmer 10 minutes longer stirring occasionally.
  5. Serve immediately.

I can't seem to find barley at my local market, I haven't asked yet, but I once asked for rye flour and they wanted me to buy a case of the stuff... so is there a brand of quick or regular barley you can recommend?


I always buy Quacker and it is good.
