How to make it

  • In skillet, heat butter and sear pork slices, sprinkling salt on them.
  • In stock pan, mix pineapple (do not drain, pour in juice and all), brown sugar, cayenne pepper, garlic, mango, and one can chicken broth. (Set green onion aside.)
  • When pork is done, add it (butter and all) to the wet mixture and bring to a boil, then cover and simmer. I did it for an hour, but it's technically ready to eat whenever the liquid mixture is heated thoroughly.
  • Dish out with a slotted spoon so you get the bits of pineapple but not all the juice and broth. Serve with green onion sprinkled on top.
