Spicy Pineapple and Mango Pork

- 3 tablespoons brown sugar shopping list
- 2 teaspoons cayenne pepper (or more to taste) shopping list
- 1 large can of crushed pineapple shopping list
- 6 to 8 pork chops (I used center cut, would work fine with any cut), sliced shopping list
- 1 garlic clove, minced shopping list
- 1 mango, diced shopping list
- 2 tablespoons butter shopping list
- 1 can of chicken broth shopping list
- 2 green onions, chopped shopping list
- 1 teaspoon coarse salt shopping list
How to make it
- In skillet, heat butter and sear pork slices, sprinkling salt on them.
- In stock pan, mix pineapple (do not drain, pour in juice and all), brown sugar, cayenne pepper, garlic, mango, and one can chicken broth. (Set green onion aside.)
- When pork is done, add it (butter and all) to the wet mixture and bring to a boil, then cover and simmer. I did it for an hour, but it's technically ready to eat whenever the liquid mixture is heated thoroughly.
- Dish out with a slotted spoon so you get the bits of pineapple but not all the juice and broth. Serve with green onion sprinkled on top.
