How to make it

  • In a large skillet, saute onion and mushrooms just until tender
  • Remove with a slotted spoon and set aside
  • In the same skillet, saute chicken breasts until no longer pink and juices run clear
  • In a separate bowl, combine soup and chicken broth until well blended
  • Add mushrooms and onion to soup mixture
  • When chicken is done, remove to a platter
  • Add soup to skillet and scrape bottom to remove any good bits stuck there
  • Return chicken to skillet and cook about ten minutes
  • Serve over white rice
  • Enjoy!
