Maple Smoked Pork Loin Recipe
Roasting the pork loin with this simple rub simulates bacon flavor without the grease.

Ingredients
  • Bonless Pork Loin- silver skin removed
  • King's Dark Syrup (or any Maple Syrup)
  • Black Ground Pepper
  • Liquid Smoke
  • water

Directions
  1. Heat oven to 375
  2. Line a baking pan with foil and use roasting rack
  3. Add water to bottom of pan so it's even with bottom of roasting rack
  4. Spray Pan and rack with non-stick spray
  5. Lay trimmed pork loin in pan and season with black pepper
  6. Pour syrup over loin (enough to coat top of loin)
  7. Add a few teaspoons of liquid smoke to top of loin (little dab will do ya)
  8. Rub mixture all over loin to evenly coat
  9. Roast uncovered in oven until internal temp reads 135 to 140
  10. If Roast is darkening and internal temp has not reached 135 cover with foil till finished.
  11. I use the water and the pork drippings as a broth over sliced loin during service. Add more water before roasting if more broth is desired.
