How to make it

  • Heat oven to 375
  • Line a baking pan with foil and use roasting rack
  • Add water to bottom of pan so it's even with bottom of roasting rack
  • Spray Pan and rack with non-stick spray
  • Lay trimmed pork loin in pan and season with black pepper
  • Pour syrup over loin (enough to coat top of loin)
  • Add a few teaspoons of liquid smoke to top of loin (little dab will do ya)
  • Rub mixture all over loin to evenly coat
  • Roast uncovered in oven until internal temp reads 135 to 140
  • If Roast is darkening and internal temp has not reached 135 cover with foil till finished.
  • I use the water and the pork drippings as a broth over sliced loin during service. Add more water before roasting if more broth is desired.
