How to make it

  • Preheat oven to 400*.
  • In a large bowl, stir together chicken, 1 cup of cheese, green onions, sour cream, chilies, and cumin.
  • Pour 1 cup of the salsa into a 9" pie plate.
  • Lay 1 tortilla in the salsa, coating 1 side.
  • Place tortilla, salsa side down, in a 2 quart round casserole.
  • Spread 1/2 cup of the chicken mixture on top of tortilla.
  • Repeat with 3 more layers of tortillas and chicken.
  • Spread with 1/2 cup of salsa.
  • Continue layering tortillas and chicken mixture, ending with tortilla.
  • Top with the salsa left over from dipping the tortillas.
  • Sprinkle on the 1/2 cup of cheese
  • Bake for 35-40 minutes.
  • Let stand 10 minutes and cut into wedges.
  • Serve with additional salsa, and sour cream.

    This sounds right up my alley. My hubby was just talking about enchilada casserole, so I think I will suprise him and make this for dinner soon. This is close to it with a twist.
