Layered Chicken Tortilla Lasagna Recipe
Fast, easy and delicious! You can serve this with a salad, for a complete meal. Feel free to add additional amounts of chicken, green onions or cheese, to taste. This is a very flexible recipe.

Ingredients
  • 3 cups cooked shredded chicken
  • 1 cup grated cheddar cheese
  • 1/2 cup sliced green onions
  • 2 cups low-fat sour cream
  • 1 - 4 ounce can diced green chilies, drained ( I use 2 cans)
  • 3/4 tsp. cumin
  • 1-12 ounce jar of salsa, medium or hot heat
  • 8-8" flour tortillas
  • 1/2 cup grated cheddar cheese

Directions
  1. Preheat oven to 400*.
  2. In a large bowl, stir together chicken, 1 cup of cheese, green onions, sour cream, chilies, and cumin.
  3. Pour 1 cup of the salsa into a 9" pie plate.
  4. Lay 1 tortilla in the salsa, coating 1 side.
  5. Place tortilla, salsa side down, in a 2 quart round casserole.
  6. Spread 1/2 cup of the chicken mixture on top of tortilla.
  7. Repeat with 3 more layers of tortillas and chicken.
  8. Spread with 1/2 cup of salsa.
  9. Continue layering tortillas and chicken mixture, ending with tortilla.
  10. Top with the salsa left over from dipping the tortillas.
  11. Sprinkle on the 1/2 cup of cheese
  12. Bake for 35-40 minutes.
  13. Let stand 10 minutes and cut into wedges.
  14. Serve with additional salsa, and sour cream.
