Tastes just like lasagna,but only half the time to cook.Simply delicious!

Ingredients
  • 1/2 lb.ground turkey
  • 1/2 C.finely chopped onion
  • 1 (15oz) can tomato sauce
  • 1 (6oz) can tomato paste
  • 1/2 C.water
  • 2 1/4 tsp.oregano leaves
  • 2 tsp.sugar
  • 1/2 tsp.ground cinnamon
  • 1/2 tsp.garlic powder
  • 1/4 tsp.crushed red pepper flakes
  • 2 c.uncooked penne pasta
  • 1 pkg (10oz) frozen chopped spinach (thawed,drained and squeezed dry)
  • 1 1/2 C.part-skim ricotta cheese
  • 1/2 C.shredded part-skim mozzarella cheese

Directions
  1. Preheat oven to 375 degrees.
  2. Cook turkey and onion in large skillet on medium heat until no longer pink.
  3. Stir in tomato sauce,paste,water and all seasonings.
  4. Bring to a boil.
  5. Reduce heat to low,then simmer for 10 minutes,stirring occasionally.
  6. Boil pasta according to directions on package,drain well.
  7. Stir pasta and well-drained spinach into sauce until well mixed.
  8. Spread 1/2 of the pasta mixture into a 11x7 baking dish.
  9. Spread ricotta cheese over pasta.
  10. Top with remaining pasta mixture.
  11. Sprinkle evenly with mozzarella cheese.
  12. Bake for 15 minutes,or until heated through.
  13. Let stand 5 minutes before serving.
  14. Makes 6 cups.
  15. *Serve with warm sourdough rolls and tossed green salad.
