Chunky Chocolate Jam Bars Recipe
These are a very rich cookie type bar. I guarantee you can't eat just one!

Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 cup firmly packed light brown sugar
  • 1 tsp. baking powder
  • 1 cup butter, softened
  • 1 1/2 cups quick cooking oats
  • 1/2 cup flaked coconut
  • 1/2 cup chopped pecans, toasted
  • 5 squares Baker's semi-sweet chocolate, coarsely chopped
  • 1 jar (12-oz.) raspberry jam

Directions
  1. Preheat oven to 350 degrees.
  2. Line a 13x9-in. baking pan with foil; grease foil lining.
  3. Mix flour, brown sugar and baking powder in a large bowl.
  4. Cut in butter with a pastry blender or 2 knives until mixture resembles coarse crumbs.
  5. Add oats, coconut and pecans; mix well.
  6. Press half the crumb mixture firmly onto bottom of baking pan.
  7. Sprinkle with chopped chocolate.
  8. Spoon jam over top; sprinkle with remaining crumb mixture.
  9. Bake 25 to 30 minutes or until lightly browned.
  10. Lift from pan.
  11. Cool completely on wire rack.
  12. Cut into bars.
