  • Sour Cream-Potato Homestyle Biscuits
  • 8 ounces cubed, peeled potatoes
  • 1/2 cup low-fat buttermilk
  • 1/4 cup low-fat sour cream
  • 2 tablespoons butter
  • 1 3/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon baking soda
  • Preheat oven to 450F degrees. Place potatoes in medium saucepan and cover with water. Bring to a boil, reducing heat and letting simmer for 15 minutes. Drain and return potatoes to pan.
  • Add buttermilk, sour cream and butter. Mash until smooth with a potato masher.
  • Combine flour, baking powder, salt and baking soda in a large bowl. Add potato mixture and stir until just moist. Turn dough onto lightly-floured surface and knead lightly four times.
  • Pat dough to about 1/4 inch thickness and cut with a biscuit cutter. Place biscuits 2 inches apart on baking sheet sprayed with non-stick spray.
  • Bake for about 15 minutes or until golden brown. Serve warm with butter blended with real honey.
