Walnut Raisin Scones

- 2 cups all-purpose flour shopping list
- 2 tbsp sugar, white shopping list
- 2 tsp baking powder shopping list
- 1/2 tsp baking soda shopping list
- 3/4 cup buttermilk shopping list
- 1/2 cup butter, cut into cubes shopping list
- 2 tbsp buttermilk shopping list
- 2 tbsp sugar, white shopping list
- 1/2 tsp salt shopping list
- 1 tbsp lemon zest, grated shopping list
- 3/4 cup walnuts, chopped shopping list
- 1/2 cup raisins shopping list
- 2 tbsp walnuts, chopped shopping list
How to make it
- Combine flour, sugar, baking soda, baking powder, salt and lemon peel in a large bowl. Cut in butter (either with 2 knives, or a pastry blender) until the mixture is similar to coarse meal. Stir in all but 2 tablespoons of the raisins and nuts, then add in buttermilk with a fork. On a lightly floured board, assemble the dough into a ball, and knead for around 2 minutes. Then, pat or roll out to 3/4 inch thick. Cut into 3 inch triangles with a chef‘s knife and place them on a greased baking sheet, about 1 inch apart. Brush the tops with the left over buttermilk and drizzle the remaining sugar and the nuts on top. Bake in the center of 425 degree oven for around 15 minutes (or until nice and brown). Serve warm with butter or jam.
