Walnut Raisin Scones Recipe

Ingredients
  • 2 cups all-purpose flour
  • 2 tbsp sugar, white
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 cup buttermilk
  • 1/2 cup butter, cut into cubes
  • 2 tbsp buttermilk
  • 2 tbsp sugar, white
  • 1/2 tsp salt
  • 1 tbsp lemon zest, grated
  • 3/4 cup walnuts, chopped
  • 1/2 cup raisins
  • 2 tbsp walnuts, chopped

Directions
  1. Combine flour, sugar, baking soda, baking powder, salt and lemon peel in a large bowl. Cut in butter (either with 2 knives, or a pastry blender) until the mixture is similar to coarse meal. Stir in all but 2 tablespoons of the raisins and nuts, then add in buttermilk with a fork. On a lightly floured board, assemble the dough into a ball, and knead for around 2 minutes. Then, pat or roll out to 3/4 inch thick. Cut into 3 inch triangles with a chef‘s knife and place them on a greased baking sheet, about 1 inch apart. Brush the tops with the left over buttermilk and drizzle the remaining sugar and the nuts on top. Bake in the center of 425 degree oven for around 15 minutes (or until nice and brown). Serve warm with butter or jam.
