Pork Cooked In Orange Juice Recipe
PORK COOKED IN ORANGE JUICE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Reagan Estate in Oak Cliff, Texas in 1986.

Ingredients
  • 5 pounds rib end loin
  • 5 garlic cloves
  • 1 teaspoon salt
  • 2 teaspoons dried Mexican oregano
  • 12 peppercorns
  • 3 oranges

Directions
  1. Pierce meat all over with point of sharp knife.
  2. Crush garlic together with salt, oregano and peppercorns.
  3. Moisten pork with juice of 1 orange then rub mixture into pork and set aside for one hour.
  4. Preheat oven to 350.
  5. Place pork in heavy casserole into which it will just fit comfortably.
  6. Moisten with juice of a second orange then add orange skin to casserole.
  7. Cover and bake two hours then drain off all but three tablespoons of the pan juices and reserve.
  8. Turn meat over and bake one hour uncovered basting from time to time.
  9. Drain off pan juices again and reserve.
  10. Turn oven up to and brown top of meat then turn it over and brown the other side.
  11. Skim reserved pan juices of most fat.
  12. Add pan juices and juice of third orange to casserole then place on stovetop.
  13. Reduce quickly over high heat then slice meat and serve with sauce.

This sounds very much like a recipe that I use for Carnitas (very tasty with avocado and beans in a corn tortilla) but we shred the meat and put it under the broiler for a bit to crisp up any remaining fat. Thanks for the post! 5+
