This dish can be made ahead to serve for a brunch or makes a great potluck dish. Hot sausage can also be used for a spicer dish.

Ingredients
  • 5 medium sweet onions, scliced
  • 12 Ritz crackers, crushed
  • 1 pound Sausage meant browned in a skillet and drained
  • 1/2 tsp salt
  • 1/4 tsp seasoning salt
  • 1 can cream of mushroom soup
  • 1/2 cup cheddar cheese, grated
  • 1 small jar pimento

Directions
  1. put half the onions in bottom of 12 x 7 dish
  2. sprinkle Ritz crackers on top of onions
  3. Add sausage meat
  4. On top of the sausage put the rest of the onions
  5. pour creamof mushroom soup over all of this
  6. add salt and seasoning salt
  7. sprinlke layer of cheese and pimento
  8. bake in preheated 400 degree oven for an hour.
