When my Mom called and said she had a meeting after school, I looked in the pantry to see what I could have ready for her. She works hard . She said she loved it. But you have to judge cause she loves me and maybe just said that.

Ingredients
  • 1 large yellow onion which I peeled and chopped
  • 1 really big potato which I microwaved
  • oil
  • water if you need it
  • 1 can corned beef ,not hash -in the funny looking tin
  • 4 over easy eggs

Directions
  1. first put potato in micro, stick with a fork a few times first, for 6 minutes
  2. it should not be mushy
  3. heat oil and put in chopped onion
  4. cook on low and swish it around, so it won't burn
  5. put beef in a bowl and mush it up a bit with a fork
  6. Add beef to pan
  7. peel baked potato and cut into small pieces
  8. Add to pan and heat on low add water if you need it
  9. flatten like a thick pancake so it gets crispy but not too crispy
  10. In a small pan fry the eggs
  11. while the hash is cooking.
  12. put hash on 2 plates and put 2 eggs on top of each
  13. I didn't add salt or pepper cause the beef is pretty salty
  14. Sorry, I forgot; but if you want biscuits, which I knew mom would, put in oven when you start all this. I used a can of 4 refregerated ones.
