this is the sponge i learnt to make in my first year of high school it is so easy and tastes so great. it does take a gentle hand - and a quite house for 20 min (hence i bake it at night after the kids are in bed!)

Ingredients
  • 3 large eggs
  • 2/3 cup of castor sugar
  • 1 tablespoon of cornflour in a cup fill the remainder of the cup with sifted plain flour
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon baking soda
  • Sift dry ingredients together 3 times to create air
  • 2 teaspoons butter
  • 3 tablespoons milk

Directions
  1. Separate whites from yolks of eggs.
  2. Whisk whites until fluffy, then gradually add sugar and yolks alternately.
  3. Whisk until sugar has dissolved.
  4. Add sifted dry ingredients.
  5. Fold gently while adding warmed milk and butter.
  6. Divide into two base lined and greased 18cm tins.
  7. Bake at 180 degees C for 15-20 mins.
  8. Turn out on wire rack to cool.
  9. Decorate to your taste.

I have never quite been able to get sponge cake to come out right. Is there a secret to the temperature of the eggs?


Try to put in whisked egg whites at a later stage.
You dont want to remove all that air in the beginning.
