Creamy carrot soup

- 2 cups thinly sliced carrots shopping list
- 1/4 - 1/2 cup chopped onion shopping list
- 1/3 cup butter shopping list
- 1 tsp salt or to taste shopping list
- 3 chicken bouillion cubes shopping list
- 3 cups boiling water shopping list
- 1/2 cup uncooked long grain rice shopping list
- 2 cups milk shopping list
How to make it
- Lightly brown the onion in melted butter.
- Add the carrots and salt and toss to coat.
- Cook, uncovered over low heat for 20 minutes
- Add bouillin cubes, water and rice.
- Cover and simmer 1 hour; then blend until smooth
- Pour the mixture into saucepan, stir in the milk and heat well--DO NOT BOIL.
