- 6 large onions sliced thin shopping list
- 1 cup salad oil shopping list
- 1- 6 oz can tomato paste shopping list
- 2 green bell peppers chopped shopping list
- 1/4 stalk celery chopped shopping list
- 1 cup dry white wine1 shopping list
- 1 4 oz can mushrooms shopping list
- 2 tbl worcestershire sauce shopping list
- 1/2 cuo finely chopped green onion tops scallionbs shopping list
- 1/2 lemon sliced very thin shopping list
- 12 or 14 filets 1/2 inch thick 4 to 6 inch diamater shopping list
- creole seasoning shopping list
How to make it
- saute onions in salad oil until well cooked. add tomato paste, cook 5 minutes, stir constantly, add tomato sauce and cook 5 minutes.add bell pepper and cellery and cook 15 minutes over very low heat.
- add 1/2 cup wine and mushrooms cooking 5 more minutes.
- add worcesteshire sauce, onion tops and sliced lemons. allow to simmer and stir constantly. do not add water
- season fish tenderloins with creole seasonings. put a layer of sauce 1/2 inch thick in bottom of dutch oven, then layer of fish and repeat with a layer of sauce on top
- repeat this untill fish is used up.
- cover with remaining sauce and add another 1/2 cup wine,
- do not stir. but turn the pot occasionally. serve hot with crackers or rice
- 6 servings

Wait while I wipe up the drool from my keyboard. This sounds soooo good. Is there a particular kind of fish you use? I can't wait to try this. I could live on fish 5 days a week. I'm always looking for new ways to enjoy it. '5' from me
