How to make it

  • saute onions in salad oil until well cooked. add tomato paste, cook 5 minutes, stir constantly, add tomato sauce and cook 5 minutes.add bell pepper and cellery and cook 15 minutes over very low heat.
  • add 1/2 cup wine and mushrooms cooking 5 more minutes.
  • add worcesteshire sauce, onion tops and sliced lemons. allow to simmer and stir constantly. do not add water
  • season fish tenderloins with creole seasonings. put a layer of sauce 1/2 inch thick in bottom of dutch oven, then layer of fish and repeat with a layer of sauce on top
  • repeat this untill fish is used up.
  • cover with remaining sauce and add another 1/2 cup wine,
  • do not stir. but turn the pot occasionally. serve hot with crackers or rice
  • 6 servings
