Apricot Mint Compote With Crostini

- 2/3 cup sugar shopping list
- 1/2 cup water shopping list
- 10 stirps orange zest shopping list
- one and one half pounds of ripe apricots shopping list
- fresh mint (optional)...squeeze of fresh lemon.... shopping list
- Crostini Instructions shopping list
- 1 baguette or country loaf shopping list
- Golden olive oil shopping list
- salt shopping list
How to make it
- Compote
- put the sugar, water and orange zest in a small pan over medium heat
- Bring to a simmer for five minutes and add the apricots increasing heat to medium
- turn the fruit carefully through the syrup
- cover the pan and reduce heat when apricots are relaxed
- simmer slowly for ten minutes reducing heat
- Then tip the apricots into a bowel and refrigerate over night....when ready to serve chop up very finely some fresh mint herbs...yum, yummy
- Crostini:
- preheat your grill or broiler and slice the baguette
- brush lightly with olive oil on both sides and dust with a little salt
- grill or broil for about one minute
- Tip the crostini straight into a basket lined with a napkin and set aside or serve.
