Apple Pie With Brandied Fig Recipe
An upscale dinner party version of an American classic. This pie takes some planning and effort because of the brandied figs, but it is really a nice pie. Serve with french vanilla ice cream or cinnamon ice cream.

Ingredients
  • The Brandied Figs:
  • 1/2 lb dried figs (1 ob if you get fresh figs)
  • 1/2 C water
  • 1/4 C granulated Sugar
  • 1/4 C brown sugar
  • 1 cinnamon stick
  • 1/2 C brandy
  • Apple Filling:
  • 3/4 cup light brown sugar
  • 1/4 cup all-purpose flour
  • 3/4 teaspoon ground cinnamon
  • Freshly ground nutmeg, to taste
  • 5 Gala apples peeled cored sliced
  • 1/2 C pureed brandied figs
  • 1 lemon, zested and juiced
  • Crumb Topping
  • 6 tablespoons all-purpose flour
  • 2 tablespoon sugar
  • Dash salt
  • 2 tablespoon butter, at room temperature

Directions
  1. Preheat oven to 450
  2. Brandied Figs:
  3. In a medium saucepan,over low heat,bring the figs,water and sugar slowly to a simmer.
  4. poach 6 minutes (less time if using fresh fig)
  5. Remove the figs and place in an airtight jar with the spices
  6. Pour Brandy, and poaching syrup to to the top,cover tightly.
  7. Allow the fruit to soak for 7 days
  8. Pie Filling:
  9. Mix together the brown sugar, flour, cinnamon, and nutmeg in a small bowl.
  10. In another bowl, sprinkle apples with the juice of 1 lemon and toss.
  11. Gently mix in the pureed fig
  12. Stir in the sugar mixture to evenly coat the apples and figs
  13. Mound the apple fig and sugar mixture into the pie pan lined with dough.
  14. Crumb Topping
  15. mix all ingredients with a fork until crumbly
  16. cover pie in thick coating with crumb topping
  17. Bake for 45 mins and let rest for about 30 before serving
