Apple Pie with Brandied Fig

- The brandied Figs: shopping list
- 1/2 lb dried figs (1 ob if you get fresh figs) shopping list
- 1/2 C water shopping list
- 1/4 C granulated sugar shopping list
- 1/4 C brown sugar shopping list
- 1 cinnamon stick shopping list
- 1/2 C brandy shopping list
- Apple Filling: shopping list
- 3/4 cup light brown sugar shopping list
- 1/4 cup all-purpose flour shopping list
- 3/4 teaspoon ground cinnamon shopping list
- Freshly ground nutmeg, to taste shopping list
- 5 gala apples peeled cored sliced shopping list
- 1/2 C pureed brandied figs shopping list
- 1 lemon, zested and juiced shopping list
- Crumb Topping shopping list
- 6 tablespoons all-purpose flour shopping list
- 2 tablespoon sugar shopping list
- Dash salt shopping list
- 2 tablespoon butter, at room temperature shopping list
How to make it
- Preheat oven to 450
- Brandied Figs:
- In a medium saucepan,over low heat,bring the figs,water and sugar slowly to a simmer.
- poach 6 minutes (less time if using fresh fig)
- Remove the figs and place in an airtight jar with the spices
- Pour Brandy, and poaching syrup to to the top,cover tightly.
- Allow the fruit to soak for 7 days
- Pie Filling:
- Mix together the brown sugar, flour, cinnamon, and nutmeg in a small bowl.
- In another bowl, sprinkle apples with the juice of 1 lemon and toss.
- Gently mix in the pureed fig
- Stir in the sugar mixture to evenly coat the apples and figs
- Mound the apple fig and sugar mixture into the pie pan lined with dough.
- Crumb Topping
- mix all ingredients with a fork until crumbly
- cover pie in thick coating with crumb topping
- Bake for 45 mins and let rest for about 30 before serving
