How to make it

  • Preheat oven to 400F, grease 18 muffin cups.
  • Whisk together flaxseed and boiling water. Let stand 10 minutes.
  • Whisk together the dry ingredients in a large bowl.
  • In another bowl, beat together flax mixture, vanilla, oil, milk and sugar until well mixed.
  • Beat into the dry ingredients.
  • Fold in carrots and hemp hearts gently.
  • Spoon into prepared cups.
  • Bake 22 minutes, cool 10 minutes in tins and then turn out and cool completely on a rack.

    looks very good and nutritious! I have been putting flax seeds in baked stuff lately, but don't grind. It adds a nice crunch and flavor, and In my little mind, flax seeds remove 3 times more plaque from my blood vessels than the expensive/lots of side effects pharmaceuticals that are advertised very heavily.
