Coconut buttons

- 125g butter shopping list
- 1 cup caster sugar shopping list
- 1 egg shopping list
- 2 cups self raising flour, sifted shopping list
- Pinch salt shopping list
- 1 cup desiccated coconut shopping list
- Extra caster sugar shopping list
- Glace' cherries (halved shopping list
How to make it
- Cream butter and sugar, beat in egg and stir in flour, salt and coconut.
- Take teaspoons of the mixture, roll into balls and press flat with the back of a spoon. Dip one side of each biscuit into caster sugar and place, sugar side up and well spaced apart on parchment lined trays.
- Top with slices of cherry.
- Bake in a moderately hot oven 190 deg C 10 - 15 mins or until golden.
- Cool on trays for 10 minutes then transfer to wire rack to cool completely.
- Makes about 40.
