How to make it

  • Cream butter and sugar, beat in egg and stir in flour, salt and coconut.
  • Take teaspoons of the mixture, roll into balls and press flat with the back of a spoon. Dip one side of each biscuit into caster sugar and place, sugar side up and well spaced apart on parchment lined trays.
  • Top with slices of cherry.
  • Bake in a moderately hot oven 190 deg C 10 - 15 mins or until golden.
  • Cool on trays for 10 minutes then transfer to wire rack to cool completely.
  • Makes about 40.
