Ingredients
  • 125g butter
  • 1 cup caster sugar
  • 1 egg
  • 2 cups self raising flour, sifted
  • Pinch salt
  • 1 cup desiccated coconut
  • Extra caster sugar
  • Glace' cherries (halved

Directions
  1. Cream butter and sugar, beat in egg and stir in flour, salt and coconut.
  2. Take teaspoons of the mixture, roll into balls and press flat with the back of a spoon. Dip one side of each biscuit into caster sugar and place, sugar side up and well spaced apart on parchment lined trays.
  3. Top with slices of cherry.
  4. Bake in a moderately hot oven 190 deg C 10 - 15 mins or until golden.
  5. Cool on trays for 10 minutes then transfer to wire rack to cool completely.
  6. Makes about 40.
