Green Pea Pesto And Pasta Recipe
Adapted from Cooking with Amy, recipe blog, a great vegetarian pesto to go over pasta.

Ingredients
  • 1 cup frozen green peas,
  • 2 cloves garlic,
  • 2 Tablespoons extra virgin olive oil,
  • 2 Tablespoons parmesan cheese,
  • Penne pasta cooked

Directions
  1. Roughly chop the garlic.
  2. In a small saucepan combine the garlic and green peas with just enough water to cover.
  3. Bring to a boil over medium heat then lower the heat to simmer and cover the pan.
  4. Cook for 3 minutes or until peas are cooked through and garlic is no longer raw.
  5. Drain the peas, reserving the water.
  6. Place the peas and olive oil in the blender and blend, adding just enough water to make a smooth paste, about 1 tablespoon.
  7. Combine mixture with parmesan cheese.
  8. Serve 2 tablespoons of sauce over each serving of penne pasta
  9. Note: I like to add basil to the pesto recipe
  10. Recipe also multiplies very well
