Just In Time Roast Turkey Breast

I know everyone and their dog has a recipe for roast turkey. Perhaps a recipe for roast dog is in order? Nah...that crosses a few lines that will probably get me banned from the site or worse! This came about because I boned . Read more .........and skinned that turkey and had to deal with 6.5lb of turkey meat. This was actually the first of my meals from that turkey...err...the turkey (that sounds better someone might think I was talking of a former brother in law and yes he is still alive if you feel you need to check) I did not want it to dry out and since it is now boneless and skinless. I needed to do something. Also I was worn out from deboning and skinning a 13lb bird. The turkey comes out as very juicy, very tender and very good! Everyone was shocked...err...delighted with the way it came out. It made 5-6 servings. See less
Ingredients
- 1 turkey breast - boneless and skinless (this was actually just one of the two breast from the bird) shopping list
- 1/2 cup fat free or reduced fat mayonnaise shopping list
- 1/2 tsp rosemary shopping list
- 1/2 tsp thyme shopping list
- 1 cup dry extra fine bread crumbs shopping list
How to make it
- Rub the turkey with mayonnaise.
- Coat the now goopy turkey with bread crumbs
- place on a wire rack in a roaster that has 1-2 inches of water in the bottom of the pan
- Sprinkle with the herbs
- Cover with foil
- Bake at 350 for 1 hour covered
- uncover and bake for an additional 10 minutes
