Spinach fetta triangles

- 1 bunch of spinach shopping list
- 1 onion, finely chopped shopping list
- 1 clove garlic, crushed shopping list
- 1 tsp curry powder shopping list
- 50g fetta cheese, diced shopping list
- vegetable oil shopping list
- 5 sheets filo pastry shopping list
- 30g butter, melted shopping list
How to make it
- Remove spinach ribs, dice spinach and simmer in a saucepan of water for about 10 minutes.
- Meanwhile, saute onion and garlic in oil in a frypan for a few minutes, add curry powder and stir for a further minute. Add spinach and fetta, remove from heat and season with salt and pepper.
- Taking 5 sheets of filo, cut each sheet into thirds lengthways. Butter each strip, add a heaped teaspoon of filling on one end and fold up in triangular way. Continue buttering strips until you run out of filling. Place triangles on oiled tray and bake in a moderate oven 180C for 20 minutes or until browned.
- Makes 12-15.
