Baja Beef and Pistachios

- 1 pound lean ground round shopping list
- 6 tablespoons shelled natural pistachios chopped shopping list
- 1/4 cup cornmeal shopping list
- 2 teaspoons ground cumin shopping list
- 2 teaspoons chili powder shopping list
- 1/2 cup tomato juice shopping list
- 1 can red kidney beans drained and rinsed shopping list
- 1 can whole kernel corn undrained shopping list
- 1 red bell pepper halved and sliced shopping list
- 8 flour tortillas crisped* shopping list
- 2 fresh jalapenos diced shopping list
How to make it
- *To crisp tortillas place directly on oven rack in preheated 400 degree oven for 3 minutes.
- Combine ground round with 1/4 cup chopped pistachios, cornmeal, cumin, chili powder and tomato juice then form into 4 oval patties.
- Place in broiler pan and broil turning once.
- Broil 8 minutes.
- Meanwhile heat kidney beans, corn and bell pepper in saucepan then drain.
- Arrange on plates with patties.
- Sprinkle remaining pistachios on top of each patty.
- Sprinkle with diced jalapenos.
- Serve with tortillas.
