Baja Beef And Pistachios Recipe

Ingredients
  • 1 pound lean ground round
  • 6 tablespoons shelled natural pistachios chopped
  • 1/4 cup cornmeal
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1/2 cup tomato juice
  • 1 can red kidney beans drained and rinsed
  • 1 can whole kernel corn undrained
  • 1 red bell pepper halved and sliced
  • 8 flour tortillas crisped*
  • 2 fresh jalapenos diced

Directions
  1. *To crisp tortillas place directly on oven rack in preheated 400 degree oven for 3 minutes.
  2. Combine ground round with 1/4 cup chopped pistachios, cornmeal, cumin, chili powder and tomato juice then form into 4 oval patties.
  3. Place in broiler pan and broil turning once.
  4. Broil 8 minutes.
  5. Meanwhile heat kidney beans, corn and bell pepper in saucepan then drain.
  6. Arrange on plates with patties.
  7. Sprinkle remaining pistachios on top of each patty.
  8. Sprinkle with diced jalapenos.
  9. Serve with tortillas.
