Ingredients
  • 1 pigs ear
  • 1 pigs tongue
  • 2 pcs. brain of pig
  • 2 pcs. large red onions, chopped
  • Soy sauce
  • Vinegar
  • About 10 pcs. calamansi or lemon juice
  • Small red chili silis
  • Salt and pepper to taste

Directions
  1. Wash well the ear and the tongue of th pig.
  2. Burn off the hairs from the ear on top of the fire range while holding it.
  3. Boil both in one pot until tender w/ the brains still in its plastic bag (so not to mix them yet) to be boiled in same pot until cooked. About 5 minutes or so.
  4. Take out tongue and ear and let cool.
  5. Grill over fiery charcoal until the skin is slightly toasted and fat slightly burned.
  6. Cube all together and put in a bowl.
  7. Fold in the brains together with the onions and mix until brains are evenly spread.
  8. Add a splash of Vinegar, Soy sauce and calamansi and red sili about 2 or more for spicyness.
  9. Salt and pepper to taste. Serve with hot white rice.
  10. If for pulutan for friends, you can cook it after grilling on hot plate over fire and mix rest of ingredients there. Yum!
