Ingredients
  • 2 pcs chicken breast (cut in bite sizes)
  • 1 cup coconut milk
  • 1/4 green bell pepper (julienned)
  • 1 cup mixed vegetables (chopped carrots and beans)
  • 2 tsp curry powder
  • 2 cloves garlic (chopped)
  • onion (chopped)
  • salt
  • pepper
  • 1 tsp soy sauce
  • 1/2 tsp vinegar
  • 1 tbsp olive oil

Directions
  1. In a bowl mix soy sauce, vinegar, alittle salt and pepper. Then add the chicken. Set aside.
  2. Heat pan and put olive oil. Add onion and garlic.
  3. Once garlic is lightly brown and onion is transparent, add the chicken. Cook until meat is tender.
  4. Lower down the heat, then add the coconut milk in the pan. Stir and let simmer.
  5. Add vegetables and bell pepper. Cook for 5 minutes.
  6. Add curry powder in small quantities and stirring them in so it'll mix well with the coconut milk.
  7. Cook for 5 minutes. Add some chili paste / chili sauce if you want it scipy hot. Serve with rice! (^_^)
